What is black truffle?
“Black diamond”
At Valtruf, we cultivate the black truffle, known as Tuber melanosporum, a true “black diamond” of gastronomy, highly prized for its intoxicating aroma and unparalleled flavor. This subterranean fungus, which grows in symbiosis with the roots of holm oaks and oaks, finds in our calcareous soils the perfect environment to thrive, especially during the cold months from November to March, when it reaches its peak.
“The black truffle has a rough, dark skin, while its interior reveals a network of white veins.”
The black truffle presents a rough, dark exterior and an interior with a delicate web of white veins. Beyond its prestige in haute cuisine—where it transforms pasta, meat, and sauce dishes into unique sensory experiences—the black truffle also offers health benefits. It is rich in nutrients and antioxidants, promotes digestive and cardiovascular health, is very low in calories, and is even said to have aphrodisiac properties.
